Mediterranean Garden-Style Pizza
4 (6-inch) whole-grain pita bread rounds, or large pre-made pizza crust
1 cup chopped, peeled cucumber
1-2 tablespoons fresh lemon juice
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano
½ cup roasted red pepper hummus or regular hummus
½ cup chopped fresh tomato
3 tablespoons sliced olives
3 tablespoons crumbled reduced-fat feta cheese
1. Preheat oven to 325 degrees. Place pita rounds or pizza crust on baking sheet and heat for about 10 minutes. Remove from the oven.
2. Meanwhile, toss cucumber with lemon juice and oregano.
3. Spread the rounds with hummus. Top evenly with cucumber, tomatoes, olives and cheese. Do not heat further. Makes 4 servings.
