Good-For-You Oatmeal Cookies
1 cup no-trans-fat
margarine or softened butter-oil blend
½ cup white sugar
¾ cup packed brown
2 eggs r 1/2 cup egg substitutes
1 teaspoon vanilla
1 cup all-purpose
1 cup whole wheat flour
1 teaspoon baking
¼ teaspoon salt
2 teaspoons ground
1 cup diced pitted
3 cups rolled oats
margarine/butter, white sugar and brown sugar with an electric mixer in large
bowl until smooth.
2. Add eggs, one at a
time, allowing each egg to blend into the butter mixture. Beat in vanilla
3. In another bowl,
whisk together all-purpose flour, whole wheat flour, baking soda, salt and
cinnamon in separate bowl; stir into butter mixture. Fold in oats and dates.
Cover and chill dough for at least one hour.
4. Preheat oven to 375
degrees. Coat two baking sheets with nonstick spray.
5. Roll dough into walnut-sized balls and place 2
inches apart onto baking sheet. Flatten each cookie with a large fork.
6.Bake in preheated oven
until cookies are golden brown, about 8-10 minutes. Allow cookies to cool on
baking sheet for 5 minutes before transferring to a wire rack to cool
completely. Makes 2 dozen.
