Breakfast Yogurt Parfaits
¾ lb. dark or light sweet cherries (or other desired fruit, such as frozen peach slices)
½ cup unsweetened apple juice
¼ teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon cornstarch
1 tablespoon water
1 cup crunchy wheat and barley dry cereal
2 cups vanilla nonfat Greek yogurt
1. Remove stems and pits from cherries; discard. Cut cherries into halves. Combine cherries, apple juice, cinnamon and nutmeg in small saucepan; cook and stir over medium heat 5 minutes or until cherries begin to soften.
2. Stir cornstarch into water in small bowl until smooth; stir into the saucepan. Cook and stir over medium- high heat until mixture boils and thickens slightly. Let stand 10 minutes to cool. Cover and refrigerate until chilled.
3. Layer half of cherry mixture, half of yogurt and half of cereal evenly into tall glass dishes. Repeat the layers. Makes 4 servings.
