Turkey and Herb Cream Cheese Subs
2 ounces light garlic-and-herb cheese spread
½ ounce reduced-fat crumbled blue cheese
½ teaspoon chopped fresh thyme
1 (8-ounce) loaf whole-wheat Italian bread, cut into half lengthwise
4 tomato slices, halved
4 ounces roasted deli turkey or other preferred meat
2 cups packed spring lettuce mix
- Stir together cheese, blue cheese, rosemary and thyme with fork. Mash blue cheese into other ingredients well.
- Spread half of cheese mixture onto cut side of each bread half. Layer tomatoes, turkey and lettuce on bottom half of bread. Top with remaining bread half.
- Press down to flatten slightly. Wrap sandwich tightly in plastic wrap. Refrigerate until served. May prepare up to 6 hours in advance, if desired.
- Cut into 4 equal portions, with serrated knife. Makes 4 sandwiches.
