Orange Glazed Baked Salmon
1 tablespoon reduced-sodium soy sauce
2 tablespoons orange juice
1 teaspoon honey
¼ teaspoon ground ginger
1 teaspoon rice wine vinegar
½ teaspoon sesame oil
2 (4-ounce) salmon fillets
¼ teaspoons black pepper
1 teaspoon olive oil
1. Preheat oven to 375 degrees.
2. Whisk together soy sauce, orange juice, honey, ginger, vinegar and sesame oil in small mixing bowl. Set aside.
3. Season salmon with pepper. Place on foil-lined baking sheet. Brush the salmon with the glaze. Place pan in preheated oven. Bake for10 minutes or until the salmon is flakey. Do not over-bake.
4. Remove pan from oven. Place remaining glaze in small saucepan over medium heat. Simmer and stir until glaze is warm. Spoon glaze over salmon before serving. Makes 2 servings.
