Preheat oven to 325 degrees. Coat a 9x9-inch baking pan with cooking spray.
- In a mixing bowl stir together ½ cup canola oil, ½ cup firmly packed brown sugar and 1 teaspoon vanilla extract. Add 2 cups quick-cooking dry oats, ½ teaspoon baking powder and 1 teaspoon ground cinnamon. Stir to combine. (Optional: stir in ½ cup mini chocolate chips, raisins or chopped nuts.)
- Pour the mixture into the baking pan. Press firmly.
- Bake for 20 minutes or until the edges are golden brown. Remove from oven and cool before cutting into 9 or 12 bars.
