1 and 1/3 cups cooked whole wheat or vegetable penne pasta
½ cup chopped red onion
1 small cucumber, peeled and diced
1 medium green bell pepper, seeded and chopped
2 cups grape tomatoes, halved
1 tablespoon tomato juice
1 tablespoon red wine vinegar
1 tablespoon olive oil
¼ teaspoon crushed dried oregano
¼ teaspoon black pepper
¼ cup chopped fresh basil leaves
In large serving bowl combine cooked penne and vegetables.
In small bowl whisk together juice, vinegar, olive oil, and seasonings.
Add the dressing to the pasta salad and toss together. Sprinkle with fresh basil. Makes 4 servings.
