Preheat oven to 350 degrees.
- Fish topping: Heat 1 Tbsp. olive oil in skillet over medium-high heat. Add 1 small chopped red onion; sauté until tender. Add 2 medium diced plum tomatoes; sauté for a few minutes. Turn off heat and stir in ¼ cup minced flat leaf parsley, 2 teaspoons dried dill weed, ½ cup unseasoned bread crumbs and freshly ground black pepper. Stir in the juice of 1 medium lemon.
- Place 4 squares of foil on counter top. Place a 4-ounce piece of white fish fillet on each foil square – tilapia, haddock, cod, etc. Spoon bread crumb topping evenly over each fillet. Fold up and seal the foil packets. Place on baking sheet and bake for about 15 minutes. Remove and let sit for a few minutes. One packet per person!
