This recipe uses the remaining half of a fresh cantaloupe.
Makes 4 servings.
- Cut up one-half of a fresh cantaloupe into cubes and place into serving bowl. Add 1 cup fresh rinsed blueberries.
- Toss gently with 2 tablespoons fresh lime juice, ½ teaspoon grated lime zest and 2 tablespoons freshly chopped mint leaves.
